Instructions
1. Preheat Oven
Set oven to 400°F (200°C). Line a large baking sheet with foil and spray lightly with cooking spray for easy cleanup.
2. Prep Ingredients
Cut sausage and onion into thick chunks.
Wash and pat dry potatoes, then cut into quarters.
In a large bowl, toss sausage, onions, and potatoes with olive oil and all seasonings.
3. Bake
Spread mixture evenly on the baking sheet.
Roast for 30–35 minutes, flipping halfway through, until potatoes are tender and edges are golden.
4. Serve
Serve hot as a complete meal or pair with steamed veggies or a side salad.
Optional Add-Ons
Add bell peppers or zucchini for extra veggies
Sprinkle shredded cheese after baking for a melty finish
Drizzle with garlic herb butter for an extra flavor boost
